Use this recipe as a guide, or make it first verbatim and then try mixing it up! Walk around your garden, farmers market or produce aisle and pick the freshest, best looking most vibrant vegetables and buy them!
Keep in mind a tray bake needs the following:
Starch - potatoes, corn
Flavourful & colorful veg - beets, peppers
Protein - beans, tofu, lentils
flavour - chili, garlic, herbs
texture - nuts, seeds
Once you have your prized haul you can start to think about what you want to flavour your tray bake with!
Please please please try this with olives, once baked they take on a softer delicious taste, much like garlic softens when it roasts.
Don't forget to eat it with a salad and keep plenty of raw food in your diet.
Chop all of your vegetables and toss with other ingredients, bake at 350-400 for 30 minutes, agitate the pan and stir around every 10 min to prevent it sticking or cooking unevenly, after you remove it from the oven squeeze with lemon and serve immediately.
