Healthy snack: guacamole appetizer bits

Guacamole Dip is enough for about 12 appetizers

Ingredients:
- 2 pcs ripe avocado
- 1 pcs juice of one lemon
- 100 g cream cheese with sea salt (0,1 % fat)
- 200 g panicles or cocktail tomatos
- 1/2 pcs garlic cloves
- 1 salt and pepper
- 1 pumpernickel
- 1 pcs circular-shaped cookie cutter (I used a glass)
- 4 pcs tomatos for serving
- 1 handfull chives or spring onions for sprinkling
Instructions:
- preparation guacamole 1. Halve the avocados and remove the core 2. the pulp is removed wit a spoon and put in a bowl. With a fork or a potato masher you prepare a puree of it 3. cut the tomatoes (200 g) in small cubes, press the garlic or cut small pieces and put together with the cream cheese, the lemon juice, salt and pepper to avocadopuree and stir it up well
- Preparation of guacamole appetizers 1. use the cookie cutters to cut the pumpernickel and stack alternating layers with guacamole and pumpernickel 2. cut the tomatoes in uniformly disks and garnish the appetizers.Finally garnish with chives.
