Green eggs and salmon

As I am not a fan of ham, I went for this classic salmon and eggs recipe

Ingredients:
- Slices Smoked salmon
- 2 Eggs
- Handful Spinach
- One spoon Goats curd
- One spoon Pesto
- Spread Butter
- 2 slices Sourdough bread
Instructions:
- Wash spinach and boil lightly for just 3 minutes
- Poach two eggs for 4.5 minutes so that they are still runny inside
- Toast two slices of sourdough bread and butter
- Top with cooked spinach, then smoked salmon and finally the eggs
- Drizzle with pesto and serve with a side of goats curd
