Cooking Stages

    • Wash spinach and boil lightly for just 3 minutes

    • Poach two eggs for 4.5 minutes so that they are still runny inside

    • Toast two slices of sourdough bread and butter

    • Top with cooked spinach, then smoked salmon and finally the eggs

    • Drizzle with pesto and serve with a side of goats curd
