HEALTHY MINT CHOCOLATE MOUSSE

Ingredients:

• 1 scoop pack of Silken Tofu
• 2 tbsp raw cacao powder
• 2 tbsp Xylitol Syrup* or liquid sweetener of choice
• 1/2-1 tsp natural peppermint oil or extract
• 50 g melted organic, sugar free dark choc

Instructions:

• Empty the tofu into a blender or food processor (I prefer food processor for this so I can scoop it out easier)
• Blend until smooth
• Add cacao, sweetener and 1/2 tsp of mint oil and optional melted chocolate, one at a time, whilst the processor is on – a little at a time so that it combines evenly
• Keep blending until all combined, scrape down the sides with a spatula at intervals
• Taste as you go – add more cacao, sweetener or mint oil if needed
