Deep Beet & Green Smoothie

Deep and beet green smoothie topped with a bit of coconut and dried pineapple and a sprinkle of moringa is perfect for breakfast after an early morning workout! When you go to the market and get beets, don't throw away the green tops, cook them or add them to your smoothies! Beet greens are as rich sources of antioxidants beta carotene, lutein and zeaxantin that protect against free radicals and maintain eye health reducing age related macular degeneration. They're also excellent sources of vitamin A along with vitamin C, both required to maintain healthy skin, tissues and membranes and strengthen the immune system. Let's not forget beet greens are quite high in b vitamins which are required for metabolic processes in the body and for energy production and conversion. Plus these leaves contain essential minerals like iron, potassium, sodium, copper and magnesium. So keep enjoying your red beetroots but experiment as well with introducing their greens in your diet.
Ingredients:
- 1 cup Water
- 1-2 medium Banana, frozen and chopped
- 1 handful Beet greens
- 1 tsp Moringa powder
- 1 tsp Vanilla powder
Instructions:
- Place water in a blender or food processor and add the rest of the ingredients.
- Blend until smooth.
- Transfer to a serving bowl and decorate the top with coconut, freshly or dried fruit. Here I used coconut chips and dried pineapple. Enjoy!
