When you spend a couple of weeks in Italy and you rekindle your love for coffee (which I only get a craving for over there for some reason), it's kind of normal that you end up creating something with it..fluffy and delicious cappuccino mousse topped with very dark raw chocolate!
Smooth creamy coconut meat base, vanilla, a pinch of salt and nutmeg, a bit of sweetness, freshly finely ground espresso powder and lastly some italian love ❤️
Perfect to start the day with a warm and fragrant cuddle topped with some granola, as a pick me up snack or as dessert maybe with some decaf coffee or some good quality coffee extract!
I don't usually drink coffee, I like the flavour and aroma in sweets but I prefer to start my day with matcha. I know, what kind of italian am I?
Caffeine can have a negative affect on some people making them feel more jittery and anxious, so if this is your case maybe slow down, switch to decaf and have it as rare treat.
But don't feel like it's bad for everyone. Stick to espresso or add a bit of plant based milk, avoid sugary drinks filled with syrups and cream and enjoy slowly sipping on your mug.
Remember to always hydrate before and after you caffeinate as caffeine is very dehydrating for the body. In Italy you're actually given a glass of water with your espresso.

Cooking Stages

    • Place the water and coconut meat in a blender or food processor and process until broken down.

    • Add the rest of the ingredients and blend until smooth and fluffy.

    • Transfer to a serving bowl of your choice and either eat straight away slightly warm from the blender or refrigerate for about 30 minutes to allow the mousse to firm up a bit.

    • Finely chop some of your favourite raw or dark chocolate and enjoy every spoonful!
