Beetroot is a great addition to smoothies or desserts to increase the sweetness without adding fruit and it brings along great nutritional benefits as well. It's rich in vitamin C, A, carotenoids, lutein, zeaxanthin, glycine, betaine, magnesium, iron, potassium, copper.
Betaine is an essential nutrient that stimulates and support liver detoxification function and it's able to lower the levels of homocysteine in the body which can be very damaging to blood vessels and increase risk of cardiovascular disease.
Beets are also high in fibre that contributes to eliminate excess LDL cholesterol and triglycerides.
And their beta carotene protects the eyes against the damaging effects of free radicals and helps to slow down the progress of macular degeneration.
Pretty sweet and pretty beneficial too!
Place all the ingredients in a blender or food processor and blend until smooth.
Pour the smoothie into a serving bowl and top with fresh strawberries.
