Pistachio Matcha Sweet Potato Kabocha Pudding
A delicious blend of light, Earthy flavors in a yummy pudding that you can have for breakfast, but it tastes like dessert at the same time!
- 1 medium sweet potato
- 1 cup cooked kabocha
- 1 tsp matcha powder
- 1 tsp Stevia
- 1/2 tsp cinnamon
- 1/4 tsp vanilla extract
- 2 tbsp water
- 2 tbsp pistachios
- 1 scoop vanilla brown rice protein powder
- Peel your sweet potato and kabocha completely before blending.
- Blend all ingredients in a food processor until very well combined. You may need to add more water if you want your pudding less thick.
- Garnish with pistachios and serve.
