Eating salads is a very easy way to introduce leafy greens and vegetables into your diet. I try to eat light salads for dinner as vegetables are good sources of insoluble fiber and help you keep your digestive tract healthy. I often have the same salad with no cheese although if you allow yourself a bit of cheese, feta cheese goes really well with the rest of ingredients in that salad.
Remove the core from the lettuce and chop the leaves. Add 2-3 tbsp of organic extra virgin olive oil.
Slice cucumbers and cut avocados into cubes. Crumble feta.
Mix all ingredients and add to the bowl together with peas.
Simply serve with black pepper of sprinkle with nuts of your choice.
