Eating salads is a very easy way to introduce leafy greens and vegetables into your diet. I try to eat light salads for dinner as vegetables are good sources of insoluble fiber and help you keep your digestive tract healthy. I often have the same salad with no cheese although if you allow yourself a bit of cheese, feta cheese goes really well with the rest of ingredients in that salad.
- 2 gem lettuse
- 1/2 large cucumber
- 2 avocados
- 50 g sweet peas
- 50 g feta cheese
- 1 pinch black pepper
- Remove the core from the lettuce and chop the leaves. Add 2-3 tbsp of organic extra virgin olive oil.
- Slice cucumbers and cut avocados into cubes. Crumble feta.
- Mix all ingredients and add to the bowl together with peas.
- Simply serve with black pepper of sprinkle with nuts of your choice.
