Broccoli & Coconut Soup
The combination of broccoli and coconut is wonderful! Fresh, healthy, tasty and very easy to make! I enjoy the soup cold as it preserves more nutrients but you can also serve the dish hot.
- 5 heads broccoli
- 1/2 yellow pepper
- 1/2 large cucumber
- 1 cup organic unsweetened coconut milk
- 1 pinch Himalayan salt
- 1 pinch black pepper
- 1 tsp cold-pressed virgin olive oil
- 20g coriander
- Place all ingredients in a blender and blend until smooth.
- Place in a bowl and add black pepper and olive oil if you wish. Feel free to sprinkle with chia or hemp seeds.
