We all love a roast chicken dinner. After all, it’s quick prep and you can let the oven do the hard work!


Ingredients

Cooking Stages

  • Preparing the chicken:
    • In a large mixing bowl, combine ingredients to marinate the chicken: 1 lemon (juice), 1/3 cup olive oil, all spice, cinnamon, paprika, crushed garlic cloves, chopped red onions, slices of lemon

    • Marinate the chicken by working the marinade into the chicken breat

    • Cover the bowl and place in the refrigerator for 4 hours or overnight

  • Cooking the chicken:
    • After marinating the chicken either for 4 hours or overnight, preheat the oven to 400F

    • Place the marinated chicken onto a baking sheet

    • Sprinkle and rub RawSpiceBar’s Sumac & Sesame Za’atar into the chicken

    • Place the chicken in the oven for 20 – 30 mins

    • Periodically check chicken temperature (internal temp should be 165 F)

    • Remove the chicken from the oven and garnish with toasted shaved almonds, toasted pine nuts, and parsley

    • Serve & Enjoy!
