Cooking Stages

  • Lemongrass Quails:
    • Mix together all ingredients from RawSpiceBar’s Lemongrass Cambodian Curry to cayenne together. Add quails and allow to marinade at least 4 hours up to 24 hours.

    • Scrape off excess marinade from quails and dredge lightly in rice flour. Set aside for 10-15 mins. This will allow a more crispy crust.

    • Add enough oil to cover the bottom of a skillet, heat to 350, just before it starts to smoke.

    • Add quails, breast side down, fry 3 mins on each side. Remove to cooling rack when done.

  • Hennessy Glazed Carrots:
    • Heat olive oil over medium heat. Add carrots and saute until slightly soft, about 3-4 mins.

    • Add salt, pepper and sugar. Stir together and allow sugar to caramelize about 2-3 mins.

    • This is important, pay attention. NEVER POUR LIQUOR FROM THE BOTTLE!! Always pour into a separate vessel THEN add to pan. This prevents any flare ups that could roll into the bottle. Pour Hennessy and flambe using a long match or lighter stick.

    • Cook until flames have completely died down, top with parsley and serve piping hot with your quail.
