These Gingerbread Walnut Energy Bites provide a boost of energy when you're on the go!
Remove the pits from your dates and soak them in a bowl of warm water for about 5-10 minutes to soften.
Drain the dates and add them to a food processor along with the walnuts, coconut and oats. Add RawSpiceBar’s German Gingerbread. Blend until the mixture forms a dough-like consistency. You will be able to tell when it comes together.
Using your fingers, take about 2 tbsp worth of the mixture and roll into a ball. Continue with the rest of the mixture.
