This is a luscious lobster bisque that is surprisingly easy to prepare! A healthy Gluten Free bisque that is rich in protein and low in fat.

Cooking Stages

  • PREPARING THE STOCK
    • Heat 1 tbsp. of butter and oil in a heavy pot or dutch oven over medium-high heat

    • Add 1/2 onions and salt, cook until golden for 5-6 minutes. Add carrots, celery an cook until fragrant for another 5-6 minutes. Add tomato paste and stir, salt and pepper to taste and cook another 2 minutes

    • Add stock, simmer until reduced by half for about 2 hours. Strain stock

  • COOKING THE SAUCE
    • Take a saucepan and add 4 tbsp. butter; melt over medium. Cook remaining onion and garlic from stock until soft,

    • 3-4 minutes. Stir in RawSpiceBar’s Quatre Epices and cook 1 minute.

    • In stock pot, add 1 cup cream and wine. Cook until reduced by half, about 20 minutes. Add reserved stock and bring to a boil. Reduce heat to medium-high, cooking until slightly thickened for about 30 minutes.

    • If you need the stock to be thicker, add more cream.

  • COOKING LOBSTER
    • Melt remaining butter in a 12′ skillet over medium-high. Season lobster tails with salt and pepper; cook, flipping once, until cooked through, 3-5 minutes

    • Divide soup between bowls and top with lobster; garnish with whipped cream and chives. Serve and enjoy!
