Cocoa Fennel Sea Scallops

A simple and elegant dish & it’s perfect for the warm weather.
Preheat oven to 400 F.
Season scallops liberally on both sides with salt, and herbs then dust with RawSpiceBar’s Cocoa Orange & Fennel. Set aside.
Preheat a medium skillet over high heat until very hot. Add oil to preheated skillet followed immediately by seasoned scallops. Sear scallops on each side until dark golden brown. Approximately 2 – 3 minutes each side.
Remove skillet from heat and drain off excess oil. Place seared scallops in skillet into preheated oven.
Cook until firm yet springy to the touch. Approximately 5-6 minutes.
