Vegan Lentil Pâté
Super tasty, super easy, super healthy
- 1 cup dried puy lentils
- 2 1/2 cups of water
- 3 bay leafs
- 3 tbsp olive oil
- 4 cloves garlic, peeled
- pinch ground pepper
- 1 large onion
- pinch salt
- basil chopped
- Add water, lentils and bay leaf to a cooking pot. Bring to a boil then cover and reduce the water.
- Simmer for about 20 minutes until lentils are soft. Stir occasionally.
- While lentils are cooking,fry onion and garlic until onions are golden, about 10 minutes and add to cooked lentils when ready. ( remember to remove the bay leafs)
- Add the lentils and onion to food processor and process until smooth. Add in the remaining ingredients and process until smooth. Add extra olive oil if you want more creamy consistence. ( Optionally,drizzle with olive oil and chopped herbs. I served mine on a baguette cut into slices.)
