My brand new recipe for gluten free, vegan and heavenly yummy chia cookies.
Preheat the oven to 165C fan/gas 5/6. Line baking tray with non-stick baking paper.
Put all the ingredients in a bowl and mix until the dough appears completely combined.
Put the dough on the side for 10-15 min, so the chia seeds can absorb the liquid.
Lightly dust a work surface and shape the dough into a large ball. Cut the ball in smaller portions and roll one half out to a 0.5cm thickness.
Using a cookie cutter press out as many shapes as possible and re-rolling the dough when you have too.
Place cookies shapes onto your baking tray.
Put the baking tray to the oven and bake the biscuits for 12 - 15 minutes.
