As you've probably noticed, I'm on a bit of a weight loss, fitness and body toning mission just now. So my meals are now getting a little cleaner and leaner, without compromising on taste of course. I still believe in balance but instead of my usual relaxed 80/20 rule (80% healthy, 20% who gives a sh*t) I'm tightening it up to 90-95% to get the best results. I don't believe in aiming for 100% as that's just setting myself for failure!
Eating your greens is pretty much the best but simplest health advice you could ever get. Eating your greens every day is easy when you have recipes like this. So quick and easy to make and so god damn good! I like to make big batches of soup, this serves 6-8 so plenty to freeze or it can be stored in fridge for 3-5 days.

Cooking Stages

    • Fry off the onions for 3-4 minutes, ensuring not to colour them.

    • Add the garlic, pea's and stock. Stir and bring to boil then add kale, allowing to cook for 2 minutes until wilted. Add remaining ingredients, blitz and enjoy.
