Apple and Cinnamon Zoats
By adding courgette to your oats you get loads more volume in your porridge, without going overboard on the quantity. Courgette is low in carbohydrates, yet still offers you green goodness and fibre. Apples release energy slowly so are much less likely to spike blood sugar levels, plus they are packed with anti-oxidants and fibre. The new season local apples are delicious and always remind me of autumn! Cinnamon is a wonder spice and helps regulate blood sugar levels – plus, who doesn’t love apple and cinnamon combined? This bowl of yumminess is like a seasonal hug on a chilly day, and, by using grated apple and courgette you practically double the size of your breakfast!
- 1 small apple grated
- 1 courgette grated
- 40 g oats
- 1 tsp cinnamon
- 1 tsp chia seeds
- 300 ml milk
- Add your apple, courgette, oats, cinnamon and chia seeds to a pan.
- Pour over your milk and if it looks too thick then top up with some water.
- Stir gently and allow to cook on a medium heat for 5 - 10 minutes - or until the oats are soft and the liquid has been absorbed.
- Serve with an extra sprinkle of cinnamon on top.
