Creamy Avocado Zucchini noodles
Avocados are an amazing addition to any meal and our one of my absolute favourite foods, however i do often get asked if one should avoid them because of their high fat content. Yes, avocados are high in fat, but not the kind you find in a bowl of french fries, or a slice of cheese. Avocado contains a wonderful wealth of the good, mono-unsaturated fats, which are essential for normal bodily function. They make your skin glow, your hair shine, boost your energy and enhance your health ten fold. They also help to boost your metabolism, and actually help the body to burn the bad saturated fats. Courgettes are bursting with fibre, vital for a healthy digestive system.The soluble fibre contained in the courgettes slows down digestion, and so stabilises blood sugar and insulin levels.
- 2 courgettes
- 1/4 cup pomegranate seeds
- 1 avocado
- 1 lemon
- 1 tbsp olive oil
- To make the sauce blend all ingredients together until smooth. Mix with the zuchinni and pomegranate. I also love to scatter with some toasted pinenuts!
- With a spiraliser spiral your zucchini into noodles. If you do not have a spiralizer and are desperate to make these, then peal the zuchinni into fettucini.
