Chocolate Vanilla Energy Balls
Raw & plant-based healthy dessert/snack
- 2 tbsp chia seeds
- 1/2 cup goji berries
- 1 pinch sea salt
- 1-2 tbsp cacoa powder
- 2 tbsp flax meal
- 1 tbsp vanilla powder
- 1 cup almond butter
- 1 cup mejdool dates
- Place dates in a bowl, boil the kettle and pour hot water over them, leave them to soften for at least ten minutes. Drain the dates and put them in a high powered blender/food processor with the rest of the ingredients except the gogi berries and chia and blend until a smooth dough forms. You may have to keep scraping down the sides of the blender bowl and reblending until smooth if your blender isn't super powerful, but it should work out just fine.
- Pop the mixture in a bowl with the chia and goji and then get in there with your hands and mash it all together.
- When completely mixed, split the mixture into quarters, and then each quarter into six equal pieces.
- Roll each piece into a little ball in the palm of your hands and you're done.Enjoy!
