Green Super Soup + Rosted Nut Topping
Green is one of my favorite color. Whether in clothing or in my food. Broccoli is green and very healthy. It is rich in minerals such as potassium, calcium, phosphorus, iron, zinc and sodium and vitamins such as B1, B2, B6, E and especially ascorbic acid (vitamin C) and carotene (provitamin A).
- 2 broccolis
- 1 onion
- 1 clove of garlic
- 1 cup almond milk
- 1 cup nuts
- Cut onion and garlic into small pieces and fry in olive oil. Wash broccoli and add.
- Give water to it until the broccoli is covered for half. Simmer for about 15 minutes.
- Almond milk to give and mash it all. Salt and pepper.
- Serve the soup with chopped parsley, almonds, lemon zest and nut oil of your choice. I used hazelnut oil.
