Winter greens + poached eggs

Legit looked in the fridge, grabbed what veggies i had a threw together a greens dish for a friend and I. (with added cauliflower cause cauliflower is the best) ....did beans, broccolini, Zucchini, broccoli (in pan) and roasted cauliflower with whole garlic gloves and then mixed the two other once they were both cooked. Plus with a sprinkling of black sea salt on top of my fresh eggs from Aussie Farmers Direct which make the most EGGcelent poachies 🤗 (we were literally filming our yolks running)
Roast the cauliflower florets and whole garlic cloves (skin on) in the oven at 200c until browned.
Meanwhile heat the oil in a pan and cook the broccoli, broccolini, beans and zucchini until slightly tender.
Add the thyme and continue to cook until vegetables are cooked through.
Add cooked cauliflower and garlic cloves and mix through with the chopped parsley, mint and lemon juice.
Serve with 2 poached egg and 1/2 and avocado.
