Crispy kale egg cupcakes

These kale egg cupcakes are the perfect crispy start to the day! (or healthy snack), especially when topped with some z'attar or parmesan cheese.

Ingredients:
- 2 eggs
- 2-4 leaves kale
- 2 tbsp Z'attar or parmesan
Instructions:
- Preheat the oven to 180c and spray the muffin tray with coconut oil
- rip off kale leaves and place into eat muffin hole
- crack one egg into each muffin hole and sprinkle with z'attar, parmesan or your choice of topping
- cook for 10 minutes
- serve with a scoop of smashed avocado and some greens
