I’m not shy about the fact peanut butter is one of my favourite things! I put it with so much, I absolutely love it! I use Meridian Foods peanut butter, they don’t add anything rubbish to it, it’s purely peanuts!
Satay sauce is delicious, peanutty, spicy, creamy and can be used for so many dishes! Whether you use it as a vegetable/ salad dressing or to add some flavour to your meat dishes as a dip! Even better it’s really easy to make!
Start by warming up the coconut milk on a medium heat, add the peanut butter and keep stirring until it dissolves.
Chop up the grate the ginger, finely chop the garlic, chilli and coriander. Add them all into the mix. Add the tsp of honey and a pinch of sea salt and give it a good stir so it’s all mixed together nicely!
Turn it down to a low heat and let it simmer for about 20 minutes giving it a stir occasionally to make sure it doesn’t burn!
