I used to be a big mayo fan and live by the view it goes with almost everything! So when I stopped eating refined food and foods that contained sugar I was gutted it had to be knocked off the list! However, home made mayonnaise is super easy, quick and cheap to make and I have eaten it with almost everything since from sweet potato wedges to salad as it’s a great way to make things tastier!
- 3 egg yolks
- 2 tbsp lemon juice
- 3/4 cup olive oil
- a pinch sea salt
- Place the egg yolks and lemon juice into a blender until there nicely mixed, then slowly but continuously pour the olive oil into the mixture whilst it’s still blending. Leave to mix for a few minutes, this time will vary depending on your blender!
- It will be ready when it’s thick and creamy. There will be a bit of oil left sitting on the top so just mix this is by hand.
- The great thing about mayonnaise is you can make any flavour you like, I added a small handful of mint to half the mixture and blended for another minute to make minty mayo. You could use anything including chillis, dill, garlic the list is endless!
- Once made keep in an air tight container in the fridge for 2 weeks.
