Cashew & Basil Pesto
I love pesto. Major comfort food and it goes with almost everything from courgetti, chicken, salads, vegetables, fish, as a dip or as a dressing! This pesto is packed with lots of goodness and no baddies that are often found in store bought pesto’s and no cheese either making it dairy free & vegan friendly! Super easy & quick.
- 1/3 cup cashews
- 1 packet basil
- 1/3 cup olive oil
- 1/2 tsp sea salt
- 1 tbsp lemon juice
- Simply add all the ingredients to a food processor and blitz up for a few minutes, occasionally scraping down the sides to make sure it’s all mixed up and it’s ready to go!
- Store in the fridge in an air tight container and it’s always on hand to spruce up a meal!
