Vegan Vanilla Semolina Pudding
I still remember that one time when I posted a toastie picture on Instagram (the “spread” I used was in fact a vegan vanilla semolina pudding, hehe) and everyone was like, “Reeeeeeeecipe?!”. So I asked my mom who is a big fan of my homemade semolina pudding if she’d want to indulge into a delicious little jar of this goodness as an afternoonsnack and as I have just published this recipe right now and you (yuuup..you!) are currently reading all of this, you don’t have a really hard time guessing the answer, am I right? So here we go!!
- 40 g spelt semolina
- 1 tbsp coconut sugar
- 250 ml almond milk
- pinch bourbon vanilla
- Add all of the ingredients into a small cooking pot and bring to a boil.
- Reduce to low heat and start stirring consistenly, otherwise it'll burn onto the pot's bottom!! Once smooth & creamy, pour it into a bowl/glass & add toppings of your preference.
