Vegan Coconut Peanut Butter Cups
So as I got asked from one of my classmates to make some peanut butter cups aka some Reese’s Peanut Butter Cups copycats. Well, maybe you know that today is National Peanut Day in the U.S.? If you didn’t, now you do! And even though I’m not from the U.S. and nor do I live there, I thought, “Why not prepping some good ol’ pb cups today?”, so here they aaaaare!
Of course you can also make the chocolate yourself but as I didn’t have any of the ingredients I would have needed but raw cacao powder at home, I decided to melt some vegan choco-just as great and a little easier for those who haven’t got the ingredients either or just as a quick tip in case you’re not feeling that chocolate-making vibe today, hehe…

Ingredients:
- 85 g vegan (raw) dark chocolate
- 3 1/2 tbsp all natural stoneground peanut butter
- 3 tsp coconut flour
- 2 tbsp coconut sugar
- 3/4 tsp coconut oil
- pinch cinnamon
Instructions:
- Simply melt the chocolate. Meanwhile stir together the remaining ingredients for the filling. Set aside and take out some medium sized muffin shapes.
- Pour in the chocolate until 1/3 of the muffin shape is filled with it.
- Take a teaspoon and shape a small peanut butter ball using another spoon. Put it onto the first chocolate layer of each of the cup and cover with chocolate until covered and smooth on top.
- Next, put them into the fridge for about 2 hours and enjoy them cold!
