Easy Pea stuffed sweet potato skins
Who else loves sweet potatoes? 😍 They’re not only really delicious, they are sooo nourishing too! Complex carbs and lots of other nutrients! Those are so easy to make, you basically just need 2 ingredients and some herbs, kind of a leftover meal! 😉

Ingredients:
- 1 medium sweet potato
- 1 cup frozen peas
- 1/4 a teaspoon each of cumin, cayenne pepper, dried parsley and dried ginger
Instructions:
- Simply pinch your sweet potatp with a fork and put inot the pre heated oven (200 degrees Celcius) for about 50 minutes to an hour. Meanwhile mix the peas with the spices and set aside.
- If the time is over, slice the potato into the half and carefully scoop out most of the flesh. Leave some of it in the sweet potato skin though, so that the sweet potato doesn't 'break'. Mix the flesh with the peas and put it back into thesweet potato. Enjoy!
