Balsamic Roasted Baby Potatoes an Kale
Tateeeeers! Potatoes are comfort food, fact! So I made these absolutely delightful Balsamic Roasted Baby Potatoes with Kale (and pomegranate seeds).
- 5-6 baby potatoes
- 2 big kale leaves
- a pinch cayenne pepper
- dried herbs
- 1 tsp good quality balsamic
- 1 tsp caraway
- First, wash and cut the potatoes into the half. Cook them until dente. Set aside.
- Next, sautée the kale in oil, water or lemon juice. Add the potatoes and the spices. Stir and pour in the balsamic. Place on a plate and enjoy warm!
