Vegan Caesar Salad Dressing
I've been using cashews in so many vegan recipes within the past two years, it seems to be a superstar ingredient to anything dairy free. Now, I get to make one of my favorite salad dressings with cashews! Vegan Caesar dressing. I seriously can't get enough of this dressing, and I've not only been using it in my salads, but also as a dip and soup topping. This Caesar dressing recipe is boasting magnesium which helps ease migraines, copper that contains antioxidants for heart health, a fabulous blend of B vitamins *from the nutritional yeast* that promotes energy, amino acids, phytonutrients, and yes, fiber!
- 3/4 cup raw cashews
- 1/4 cup nutritional yeast
- 1/4 cup filtered water
- 2 tbsp Chia Seeds
- 1 whole lemon
- 1 tbsp capers
- 1/4 cup Extra virgin olive oil
- In a blender, blend all ingredients together until smooth. If needed, add another 1/4 cup of water to thin out the dressing.
- Please note, if you don't want your dressing super salty, you can put less than the recommended dose of capers. You can start out with less, taste test, then add more for your individual needs.
