Zoodles with Salmon and Dill Dressing

Delicious zucchini noodles with spicy hot sweet chilli marinated salmon fillet. Roasted tomatoes and sauteed kale on the side and topped with dill-yoghurt dressing and pumpkin seeds.
Delicious treat with lots of healthy fats, long lasting energy release and low carbohydrate levels.

Cooking Stages

    • Wash vegetables, julien zucchini

    • Place zucchini, kale and tomato in a pan, drizzle a bit of oil on top

    • Cook under medium flame until sizzling, add a small cup of water and cook until soft

    • Chop up dill and mix with yoghurt

    • Once vegetables cooked, place zoodles in center of plate, top with salmon

    • Put kale and tomatoes around zoodles

    • Top with the yoghurt dip and sprinkle the pumpkin seeds and seasoning on top

    • Don't forget to enjoy :)
