I love lentils as they're a great source of fiber and protein. Paired with seasonal vegetables, you'll be able to get the most of nutrients and an a warm, comforting taste that is perfect after a chilled February day. I added chicken to increase my intake of protein.

Cooking Stages

    • Start off with peeling your vegetables

    • Chop the vegetables and the chicken to the same size chunks

    • Put all ingredients in a pan and fill pan with water

    • Cook for about 35 mins on medium-low heat

    • To check if it's ready, pierce vegetables

    • Enjoy with fresh thyme, some grated smoked cheese or a dollop of sour cream :)
