Italian Caprese Salad
This salad is a great appetizer, main meal or side dish at BBQs or dinner parties. It's made with beef tomatoes, buffalo mozzarella, fresh basil and balsamic vinaigrette. This meal is a lovely low-carb option. The tomatoes packed with Vitamin C and lycopene antioxidant. The basil is great for maintenance of cardiovascular health as it helps blood clotting. The whole meal is about 350kcal which is great, whether it's a snack or a side dish.
- 1 large Mozzarella
- 1 large Beef tomato
- 1 bunch Fresh basil
- 1 tbsp Balsamic vinaigrette
- Slice the mozzarella and tomato thinly.
- Layer them on top of each other.
- Top with washed basil leaves, balsamic and freshly cracked black pepper.
