Latvians have many distinct dishes but a very popular one to bake at Christmas is Piparkukas. These gingerbread cookies are more soft, nicely spiced and so delicious. Christmas in Latvia cannot be imagined without baking tray upon tray of gingerbread (piparkūkas). It is a national pastime in the days leading up to Christmas. This is a wonderful Christmas cookie which my family prepare every year.

Cooking Stages

    • In a small saucepan heat golden syrup and spices until well combined, roughly 3-4 minutes.

    • In a bowl beat together 2 eggs and sugar.

    • Place your golden syrup into a stand mixer. Add room temperature butter. Mix well. Then add your eggs with sugar mixture.

    • In a small bowl dissolve your bicarb soda with warm water and add into the mix. Slowly add sifted flour and mix. Gradually add more flour if the dough is still sticky.

    • Place the dough on kitchen counter and knead it until it becomes shiny (usually around 5-7 minutes).Wrap the dough in plastic wrap and place in the fridge overnight.

    • Hour before baking, take the dough out of the fridge to allow it to warm up.

    • Preheat the oven to 180 C/ 350 F. Line baking tray with baking paper.

    • Work with half of the dough at a time. Sprinkle some flour on the work surface, roll the dough 5mm thick and cut out shapes with cookie cutters.

    • Place the gingerbread on the baking tray. Whisk 2 eggs and brush the eggwash on all the cookies.

    • Bake gingerbread in the oven for 8-10 minutes until golden brown. Let them cool down completely.

    • In a bowl mix your icing sugar with milk. Place into a piping bag with a small nozzle.Decorate each cookie how you like and let them set. Enjoy!
