Easy Stuffed Peppers with Lemon Couscous
These delicious stuffed peppers make a colourful Mediterranean-style dish with sun-blush tomatoes and melting mozzarella - and yes, it tastes as good as it looks! These stuffed peppers are ideal for lunch with a salad or served for dinner with new potatoes and fresh greens. Ready in just 40 mins, stuffed peppers with lemon couscous and mozzarella are vegetarian-friendly and are sure to tempt children with their vibrant colours and tasty flavours too.
- 4 sundried tomatoes
- 4 lemon slices
- 2 red/yellow peppers
- 1/2 cup couscous
- 1 tsp turmeric
- 1/2 ball mozzarella
- 1 pinch salt
- 1 pinch pepper
- fresh parsley
- olive oil
- green salad, to serve
- To cook couscous place it in a bowl, add turmeric, spices, add sun-dried tomatoes, parsley and lemon, olive oil and add hot water. Cover with a plate and leave for 10-15 min.
- Preheat your oven to 180 C or 350 F.
- Deseed your peppers and stuff them with couscous mixture.
- Add mozzarella on top and cook for 25-30 min or longer depending how you like them. Enjoy with salad.
