Couscous Recipe with Roasted Peppers & Chickpeas
This hearty supper is healthy, cheap and filling meal - great for an easy meal for you or your family. It is quick, delicious and I just love the texture and flavour roasted peppers add to this dish. An exotic and colourful couscous dish with chickpeas and roasted red peppers. Serve as a hot dish or cold as a salad.
- 100 g couscous
- 240 g chickpeas
- 1 tsp turmeric
- 1 tsp cumin
- 1 cup hot water
- 2 red/yellow peppers
- 1 tsp lemon
- 1 small bunch fresh Parsley
- 1 pinch salt
- 1 pinch pepper
- In a bowl, combine your couscous with all the ingredients. Add hot water and let it sit for 10-15 min.
- Preheat your oven to 260 D or 500 F. Cook your peppers until they turn black and blister.
- Let the peppers cool down a bit and then take off the skin, slice them and serve on top of the couscous. Enjoy!
