Coconut Milk Poached Cod with Spinach

While this plate of food looks incredibly fancy and restaurant quality, it is quick and simple enough to whip up for a weeknight meal. On top of that, it’s healthy, too – lean fish, fresh greens, and a complex spicy-sweet broth bolstered by nutritious coconut milk. This beautiful coconut milk poached cod has no fishy taste, its really tender and soft with amazing flavour. It’s served in coconut milk broth with spinach and a hint of lime zest, and is ready in about 15 minutes. Coconut adds a unique twist on poached fish.
Melt your butter and add minced garlic and lime zest and cook for few min, you can also add chilly if its fresh.
Add count milk and chicken stock, add chilly and mix well.
Cook for few min, add spinach, add cod and cook for 5 min. Turn the cod around and cook for further 3 min.
