Chicken, Sweet Potato & Coconut Recipe
This chicken and sweet potato coconut curry is simple and very tasty. This is a cheap and easy dish. You could add chopped cauliflower, red pepper or aubergine before the sweet potato and experiment with other flavours. All the flavour work well together, and coconut milk add the creaminess to the dish.
- 1 large chicken breast
- 1 medium sweet potatoes
- 150 ml chicken stock
- 200 ml coconut milk
- 100 g frozen peas
- 1 tsp curry paste
- 1 tsp chilly
- 1 tsp turmeric
- 1 tsp cumin
- Peel your sweet potato and cut into cubes. Cut your chicken breast int cubes.
- Heat the oil in a deep pan. Add the chicken and spices, mix well together.
- Add sweet potatoes, and then pour in the stock and coconut milk. Bring to the boil, then simmer for 15-20 minutes.
- Tip in the peas, bring back to the boil and simmer for a further 4-5 minutes. Season to taste before serving.
