Stuffed Cabbage Rolls - Golubcy are one of my favorite comfort foods. Serve with my delicious tomato sauce and sour cream for a comforting meal. Stuffed cabbage or golubtsy (“go-lub-tzy”) in Russian is a dish of Middle Eastern as well as European cuisine. This dish emerged on different continents and at different times under many names, but the essence of it remained the same: put some cooked grains and minced meat in large leave (grape, cabbage etc), wrap neatly and serve. The result is sensational. This recipe serves about 10 people and keeps well in a fridge up to 3 days. It’s a satisfying, filling meal that is bound to lift your spirits.

Cooking Stages

    • Take out the core from the cabbage, just go around with a knife and it pops out quite easily.

    • Prepare two pots, add a bit of salt into each pot. Place your rice into one pot and your cabbage into the second one. Cook your cabbage for about 10-15 min. Make sure you time it, if you over cook the cabbage leaves will break apart.

    • In a food processor mix your onion, garlic, fresh dill and parsley. If you dont have a food processor do it by hand.

    • In a large bowl, add your minced pork, the onion, garlic and greens, then season it well with salt and pepper. Then add your cooked rice and water. Mix it all through.

    • Take your cabbage out and leave it to cool down completely and then separate the leaves gently.

    • To make the sauce, fry your chopped onion in oil. Then add grated carrots, and red bell pepper, tomato puree, bayleaf and peppercorns and salt. Then add your chopped tomatoes, water and sour cream. Mix it all through and cook for 10 min on low medium heat.

    • Cut the hard bit in the middle of each leaf gently with your knife. Then add about 1-2 tbsp of the meat mixture into each leaf and roll it up.

    • Place your golubcy into a deep pot, add a first layer, then add your sauce, add second layer and more sauce and repeat until its all tight and has enough sauce. Add more hot water inside about 2 cups and cook for about 3-4 hour on low heat with lid closed.

    • Serve with sour cream, fresh dill and sauce! Enjoy!
